Tomato Salsa Recipe

This salsa recipe takes SECONDS to make. Ok, maybe a minute, but there is really no reason to buy pre-made salsa filled with those few extra ingredients that your body does not need. Keep it fresh, keep it healthy, and you will find that the flavor will never compare to store bought.

Salsa is such a versatile dish. It can be used on tacos, in breakfast omelets, in a sandwich or melted into a panini, over nachos, as a dip, over grilled fish or chicken.

Do not get stuck in a tomato salsa rut either. Try strawberry, mango, or pineapple salsa by simply swapping the one tomato ingredient and keep the rest of the recipe the same.

•  2 cups diced tomato
•  1/4 cup chopped cilantro (optional)
•  1 clove minced garlic
•  1 small onion chopped (ideally red or vidalia)
•  1/4 tsp salt (I prefer a healthy Pink Himalayan salt for the health benefits)
•  1 small pepper diced
•  1/8 cup olive oil
•  1/4 tsp black pepper
•  1 lime (or an 1/8 cup of vinegar)



1. Mix all ingredients into a bowl except for lime.
2. Press down and roll lime on table or counter to break up the membranes and release juices within the skin.
3. Cut lime in half and squeeze the juice from one half of lime into dish. Stir and taste (taste with a tortilla chip if possible to see how it will balance out). If you like it more tart, add juice from other half of lime.
