Tomato, Basil & Cheese Salad Recipe


Give me a tomato drowning in olive oil, accompanied by cheese and basil, and this Italian (and Irish) girl is very happy. The simplicity of this dish is classic Italian style. It reminds me of my childhood, where we had a garden and I would grab a tomato and eat it straight off the vine, or wandering through my “Nonno’s” orchard with the smell of basil thick in the air.

The savory and spicy smell of tomatoes ripening in the sun is one of my all-time favorites. This dish is great for a crowd and if chopped finely, would be a great topping for bruschetta, or melted into a panini sandwich.



There are no measurements with this recipe, nor are there any rules. You can add and edit this to your liking and it is sure to taste great.

Whole or halved cherry tomatoes (or your preferred tomato of choice), extra sharp cheddar cheese or mozzarella, fresh garlic, fresh herbs (I like basil and chives), balsamic vinegar, olive oil, Pink Himalayan salt, pepper. Stir it together and enjoy.

Having fresh herbs on hand is such a great, inexpensive, and tasty way to add additional flavor and nutrients to any meal. The cost of buying a small plant vs. the fresh cut herbs are almost the same, so why not give it a try? If in a colder climate, dedicate a south/sun facing windowsill to some small potted herbs for year round enjoyment. Tip: don’t pluck the leaves, instead, cut horizontally across the top, and don’t over water.
