Sweet Potato Taco Recipe {with homemade gluten-free tortillas}

Adding diced sweet potato to your regular taco filling adds flavor and additional nutrients. If you do not like sweet potatoes, you can always leave them out of this recipe. I do not like the flavor of sweet potato by itself, but it cooks down so you do not notice it is in there and it is a great way to get some extra vegetables into any dish.

I finished this off with sharp cheddar cheese, fresh salsa (salsa recipe), and wrapped the taco filling in a soft, gluten-free tortilla wrap (gluten-free tortilla recipe).

•  1 medium onion
•  2 cloves garlic, minced
•  roughly 20 oz meat (one package beef, turkey, steak or chicken)
•  1 pepper (I used small colored peppers)
•  1 sweet potato
•  3/4 cup water
•  1/2 cup cilantro
•  handful chopped fresh rosemary & parsley. If using dried seasoning, only add about a tsp or each, or to taste
•  taco seasoning (get recipe)
•  salsa (get recipe)
•  large tortilla wraps (get gluten-free tortilla recipe)



1. Sauté diced onion, diced sweet potato, and meat over medium heat.
2. Brown and caramelize the ingredients by letting them cook down. As they start to form a “film” on bottom of pan, add a few tablespoons of water as needed to deglaze, which adds great flavor.
3. Once meat is cooked through and browned, add minced garlic, chopped peppers, rosemary, parsley, and taco seasoning with 1/2 cup water (only add as much water as needed to keep ingredients moist, you do not want it to be runny.)
4. Cook for 5 minutes, stir in cilantro and take off heat.
5. Fill tortilla wrap, taco shell, or pour over nachos.
6. Add your favorite toppings such as sharp cheddar cheese, salsa, sour cream, avocado or guacamole, or black beans
