Easy Coconut Macaroons Recipe

This recipe is so easy to make and uses only 4 ingredients (with optional additions). It is healthy, low-fat, and easily satisfies any sweet tooth. Coconut macaroons are traditionally a flourless cookie, so it is safe for those who are sensitive to gluten.

•  4 cups sweetened coconut flakes
•  4 large egg whites at room temperature
•  1/2 tsp vanilla extract
•  1/2 tsp salt (I prefer a healthy Pink Himalayan salt for the health benefits)



Preheat oven to 325 degrees. Whip the egg whites (at room temp), vanilla extract, and salt on high speed with an electric mixer fitted with the whisk attachment until they make medium-firm peaks (or hand whisk vigorously until your arm hurts). Gently fold the egg whites into the coconut mixture, but first, break apart the coconut flakes so that they are not clumped together. Using a rounded tablespoon or small ice cream scoop (I used a circular measuring tablespoon), scoop up batter and fill spoon completely. Drop batter 1 inch apart on baking sheets lined with parchment paper or lightly greased. Bake until lightly golden, about 20-25 minutes.



•  A lot of recipes call for 1/4 cup sugar to add some sweetness, but with the shredded coconut already sweetened, I personally do not need it. If you do want a sweeter flavor, I recommend Pure Stevia, a truly healthy, all-natural, zero calorie sweetener.
•  1 tbsp oil (I like using coconut oil for almost all of my cooking due to the health benefits and high heat tolerance, but any plain flavored oil will do)
•  A few tablespoons of cocoa powder turns these into a delicious chocolate treat. Add cocoa powder to taste.
•  Almond extract (about 1/4 tsp) will add some great flavor to these as well.
•  Adding a 1/4 cup of flour into the mix, be it coconut flour, or regular flour will help the cookie bind and hold together really well, since these are delicate without any flour at all, as I have prepared them here.
