Coconut Chocolate Chip Muffins Recipe

These muffins are a family favorite – we all love chocolate! I enjoy making them with my young son who is such a great little helper and loves to measure, stir, and line the muffin tin. Since he was just 14 months old, we always try to make muffins before friends come to visit, not only for a yummy snack, but also to make our home smell inviting.

COCONUT CHOCOLATE CHIP MUFFINS RECIPE

 

INGREDIENTS

•  2 cups all purpose flour or whole wheat flour
•  1/2 cup raw sugar (try to find a raw, pure cane sugar, or palm coconut sugar)
•  3 tsp’s baking powder
•  pinch of salt
•  1 tsp cinnamon
•  1 tsp nutmeg
•  3/4 cup of semi-sweet chocolate chips
•  1 egg
•  3/4 cup of milk
•  1 tsp vanilla extract
•  1/3 cup of coconut oil

 

DIRECTIONS

1. Heat oven to 375. Place 12 liners into muffin cups or grease with butter.
2. Mix flour, sugar, baking powder, salt, cinnamon, nutmeg and chocolate chips into a mixing bowl.
3. In a separate mixing bowl beat egg, then mix in milk, vanilla and coconut oil.
4. Combine wet ingredients to dry ingredients by slowly stirring together.
5. Fill muffin cups 3/4 full.
6. Bake for 15-18 minutes. Makes 12 muffins.
